Instructions  (Serves 2-4)
1. Blanch potatoes and carrots in a pot with boiling salted water just until tender, 1 minute before that point add the broccoli and then drain all
2. Cook the onion on low heat with the cooking oil until translucent
3. Pour the jar of Currylove Yellow Curry into sauce pan and bring to boil
4. Add potatoes, carrots, pineapple, broccoli and onion to pot, cook until done, approximately 4 minutes

Before serving add chopped cilantro and nuts

Serve with steamed rice


Yellow Thai Vegetable Curry
CURRY LOVE INGREDIENT
LUSCIOUS YELLOW THAI CURRY™
Ingredients
1 cup peeled potato cubes
1 cup peeled carrot slices
1 cup fresh pineapple chunks
1 cup broccoli florets
1 Tsp cooking oil
1 cup onion cut into slices

Garnish
1 Tsp cilantro chopped
some chopped cashew nuts
