Instructions  (Serves 4)
  1. Mix the Luscious Yellow Thai Curry with the mayonnaise and season with salt and pepper.
  2. Arrange eggs and if you like some lettuce leaves on plate.
  3. Drizzle with Curry Dressing.
  4. Sprinkle with scallions, peppers, celery and cherry tomatoes
  5. Enjoy with grilled slices of sour dough bread

Ingredients
1/3 jar of Luscious Yellow Thai Curry
½ cup mayonnaise
Salt and Pepper
6 Hardboiled eggs cut in half
2 Scallions sliced finely
1 red or green bell pepper diced
1 celery stalk sliced very finely
1 cup cherry tomatoes
