Instructions  (Serves 2-4)
1. Turn on the oven and preheat to 120° Fahrenheit
2. Season the salmon steaks with salt and pepper
3. Heat the oil in a skillet till hot, add the salmon steaks and saute 2 minutes on each side
4. Transfer the fish to a plate and keep warm in the oven
5. In a fresh skillet heat the oil to hot and add the shallots, saute for 1 minute until translucent, then add the garlic and cook for another minute
6. Add the spinach and season with salt and pepper, cook until wilted and hot, stir in the pepper dice and cook for another minute occasionally stirring
7. In a sauce pan bring the curry sauce to a boil
8. Start plating the dish; put the spinach that you have squeezed of excess liquid onto center of plate, top with salmon and drizzle with curry sauce

Before serving garnish with chili and basil, try adding some whipped cream to the curry sauce to make it fluffier and give it a "gourmet look"

Serve with steamed rice

CURRY LOVE INGREDIENT
LUSCIOUS YELLOW THAI CURRY™
Ingredients
2 Tsp cooking oil
4 8-oz salmon steaks
salt + pepper
1 Tsp cooking oil
¼ cup chopped shallots
1 garlic clove chopped
8 cups fresh baby spinach
¼ cup red pepper small dice

Garnish
4 basil sprigs
4 red chilies
