Instructions  (Serves 2-4)
1. Heat the oil in a skillet and heat till very hot, add the chicken meat and season with salt and pepper
2. Cook until browned on all sides, approximately 2 minutes
3. Transfer the meat to a plate and keep warm
4. Turn down the heat and add the sauce to the pan
5. Next add the bell pepper and simmer over low heat for 3 minutes, stirring occasionally
6. Next add the the corn and cook for 2 minutes
7. Add the meat and bring to a short boil, do not boil for longer than 2 minutes or the meat will become tough
8. Before serving, garnish with basil leaves

Serve with steamed rice or noodles


Red Curry with Chicken and Corn
CURRY LOVE INGREDIENT
PASSION RED THAI CURRY™
Ingredients
2 Tsp cooking oil
1 pound chicken breast, skinless and sliced
salt + pepper
1 cup baby corn fresh or, if unavailable, canned and rinsed (if you use fresh corn, cook it in boiling saltwater for 2 minutes)
1 cup green pepper sliced
1 cup yellow pepper sliced

Garnish
8 basil leaves, sliced
